Thanksgiving Challenge Results

The results are in! I can honestly say my challenge receives an A! But I have to give it an A- due to a few technicalities. My favorite part of the meal was the stuffing. The sweet and savory combination created by the buckwheat bread & pears vs the brown rice bread and the sausage was quite delightful. Unfortunately my sweet potatoes were a little under cooked and the cranberry sauce never completely set up and was a bit too tart for our tongues. But our bellies still managed to hit the "too full" mark and it all looked beautiful!


My biggest challenge, the pumpkin pie surprised me. The flavor was great, the texture needs a little tweaking. The coconut sugar created a carmely hint on our tongues which was lovely. It did not have traditional flavor but I think I'm on my way to creating a great spin on the traditional pie. I was worried the flax-gel egg substitute was not going to let the pie set up enough so I added 1/4 cup coconut flour. The flour created an almost grainy texture which I wasn't thrilled with. Now I know the flax-gel would have done just fine on it's own. This week I am going to work on perfecting this dessert so I can officially post a great pumpkin pie recipe.
