Guiltless Pizza Logs

The other night I was craving one of my greatest enemies; pizza. Being tired and hungry, I was about to dive over the deep end when I was saved by inspiration. I went to the store, purchased all my favorite pizza toppings, went home and created a masterpiece I like to call Guiltless Pizza Logs.

Basically I substituted zucchini for pizza dough and wound up with a delectable alternative for my favorite food and arch enemy. You can make as many pieces as you want with any toppings you are in the mood for.


Cut a medium or large zucchini lengthwise and carve out the seeds, 


spread a layer of sauce along the bottom, 


top with the goodies and bake at 350 degrees for 15 minutes. 


The zucchini will be cooked but still firm and your cheese (if you use cheese) will be melted into gooey goodness! Enjoy right away. 

These pizza logs make a great treat for long, stressful days, especially all-nighter flights. Prepare the logs before leaving home and heat them on the airplane at 275 degrees for 10-15 minutes.

Yet another guilty pleasure conquered!
