Mile High Trail Mix

Free of: Wheat, Gluten, Soy, Dairy, Eggs
Low Glycemic


Of all the snacks I discuss, this is by far my favorite. This delicious mix travels with me everywhere I go. Whether on a flight, a road trip or just a shopping spree, I never leave home without this great source of protein and fat to help me get through the day a little more cheery. Make this recipe more personal by using your favorite raw nuts and dried fruit.

Ingredients:

1 Cup raw cashews
1 Cup raw almonds
1 Cup raw walnuts
1 Cup raw pecans
1/2 Cup pistachio pieces
1/2 Cup banana chips
3/4 Cup large unsweetened coconut flakes
3 Tbsp coconut oil, melted
1 tsp vanilla (optional)
2 Tbsp agave
cinnamon

1. Pre-Heat oven to 300 degrees

2. In a large bowl, combine nuts, banana chips and coconut flakes

3. Pour melted coconut oil, agave and vanilla over nut mixture and stir until well coated

4. Sprinkle with desired amount of cinnamon and mix until evenly dispersed

5. Spread mixture in a single layer on a cookie sheet or in a baking dish

6. Bake for 15-20 minutes, stirring every 5 minutes, until golden brown

Note: If you use dried fruit other than the banana chips, toss them in either during the last 5 minutes of baking or as soon as the mix comes out of the oven so they don't burn.
