Valentine's Chocolate Fondue

Free of: Sugar, Dairy, Wheat, Gluten, Eggs, Soy
 I tried this recipe on my friend and her 2 1/2 year old daughter who do not have dietary restrictions. They loved it, and I hope you do too!

Ingredients:
Serves 4-6

1 oz square unsweetened BAKERS chocolate
1/2 cup Xylitol
1 14oz can coconut milk
1 tsp vanilla (optional)
Various fruits for dipping

1. Melt chocolate over low heat in a medium sauce pan or double boiler
2. Once melted, add coconut milk, Xylitol and vanilla, then bring to a slight boil over medium heat, stirring often
3. Once the Xylitol is completely melted, transfer to a fondue pot and enjoy with various fruits

Note: I use Xylitol because it has no sugar and is a 1:1 ratio to sugar. It has little flavor so I find it to be best for mixing with unsweetened chocolate. If you do not want to use Xylitol, you can use regular sugar (if you don't have blood sugar issues) or any 1:1 ratio sugar substitute.
