A Nice, Naughty Treat


Whether it's because you are working an all nigher, trying to stay awake through recurrent training or a long work day, getting together with friends or just really in the mood for something sinful tasting, some days you just need a naughty treat. To avoid the regret that sets in as soon as you've consumed all that awful yumminess, try this delicious snack. It may taste naughty but this snack is actually quite nice for those splurge moments.

Carmel Brown Rice Square Mix
Free of Wheat, Gluten, Dairy, Eggs, Corn
Note: Earth Balance makes a Soy Free butter substitute if you can't have soy

5 cups brown rice cereal squares
3/4 cups raw peanuts
1/2 cup raw slivered almonds
3 Tbsp butter substitute
1/4 Cup coconut sugar
1 Tbsp agave nectar
2 Tbsp ground flax or flax meal
Sea Salt

1. Preheat oven to 250 degrees.

2. In a greased baking dish, combine brown rice cereal squares, peanuts and almonds

3. In a medium saucepan, melt butter substitute, coconut sugar and agave over medium high heat until boiling (about 5 minutes), whisking often.

4. Once boiling, pour over cereal mix and coat evenly.

5. Sprinkle mixture with 1 Tbsp flax, toss, sprinkle again with remaining flax & salt and toss again 

6. Place in the oven and bake for 45 minutes, stirring every 15 minutes

7. Let cool and enjoy!

This snack tastes naughty but is surprisingly nice. Enjoy it with friends, coworkers or by yourself when you feel like a treat.
